Ingredients list for Blueberry Oatmeal Cake
- 200 grams + to top Fresh blueberries
- 1/2 cup + to sprinkle Rolled oats
- 3/4 cup + for dusting Refined flour (maida)
- 120 grams + for greasing Butter
- 3/4 cup Castor sugar (caster sugar)
- 1 teaspoon Vanilla essence
- 3 Eggs
- 1 teaspoon Baking powder
- 1 tablespoon Milk
- 2 tablespoons Mixed seeds (pumpkin seeds, sunflower seeds, melon seeds)
Method
- Preheat oven to 180° C. Grease a loaf tin with some butter and dust with some flour.
- Take butter in a mixing bowl, add castor sugar and beat with an electric beater till light and fluffy.
- Add vanilla essence and beat again. Add eggs, one at a time, and beat after each addition.
- Sieve together flour and baking powder into the mixture. Add oats and blueberries and fold in well. Add milk and mix well.
- Transfer the batter into the prepared tin and tap lightly. Sprinkle some oats, some blueberries and some mixed seeds.
- Keep the tin in the preheated oven and bake for 20-25 minutes. Remove the tin from the oven, cool and demould.
- Slice, arrange them on a serving platter and serve.
