Ingredients list for Blinis
- 55 millilitres Milk lukewarm
- 8 grams Refined flour (maida)
- 32 grams Buck wheat flour
- 1 teaspoon Fresh yeast
- ½ teaspoon Sugar
- 2 Eggs
- to taste Salt
- as required Sour cream
- 3-4 Quail eggs hardboiled and cut into roundels
- as required Fresh parsley
- to taste Crushed black peppercorns
Method
- Take ½ of milk in a mixing bowl. Add yeast and sugar, mix and set aside to activate.
- Separate egg whites and yolks and put into two different bowls.
- Sieve together buck wheat flour, refined flour and salt into the activated yeast. Add remaining milk and egg yolks and mix well. Set aside to ferment for 10-15 minutes.
- Beat the egg whites using an electric beater till soft peaks appear. Transfer into another mixing bowl.
- Add ½ fermented mixture and fold in. Add remaining fermented mixture and fold in well.
- Heat a non-stick pan. Put a spoonful of the mixture and cook, turning sides, for 1-2 minutes on each side or till light golden on both sides.
- Place the blinis upside down on a serving platter. Put some sour cream, place quail egg roundels and a parsley leaf on top.
- Sprinkle crushed peppercorns and serve immediately.
