History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Biscuit Puris Recipe

  • Whole Wheat Flour 1 cup

  • Powdered Sugar ¼ cup

  • Onion seeds (kalonji) ½ tablespoon

  • Salt to taste

  • Oil 1 tablespoon + for deep-frying

  • Cinnamon powder ½ teaspoon

Method

Step 1

Combine the the wheat flour, onion seeds, sugar, salt, one tablespoon oil and cinnamon powder in a bowl. Add a little water and knead into a stiff dough. Cover with a damp cloth and set aside for ten minutes.

Step 2

Divide the dough into sixteen equal portions, shape into balls and roll out into a three inch diameter puris. Prick the puris with a fork.

Step 3

Heat sufficient oil in a kadai and deep-fry the puris, one by one, on low heat till golden and crisp. Drain on absorbent paper.

Step 4

Serve immediately.
