Ingredients
- 2 tablespoons beetroot puree
- 16-20 walnuts
- 1 cup yogurt
- 1 teaspoon red chili powder
- 1 teaspoon roasted cumin powder
- Salt to taste
- 6-8 fresh mint leaves
- Fresh mint sprig to garnish
Method
- Heat sufficient water in a non-stick pan, add walnuts and blanch them. Remove from heat, drain, cool and chop roughly.
- Mix together yogurt, beetroot puree, walnuts, chilli powder, cumin powder and salt in a bowl.
- Add mint leaves, mix well and refrigerate to chill.
- Transfer into a serving bowl, garnish with mint sprig and serve chilled.
