Ingredients list for Basic Dark Sponge

  • 75 grams Cocoa powder
  • 300 grams Refined flour (maida)
  • 6 grams Baking soda
  • 7 grams Baking powder
  • 150 grams Butter
  • 375 grams Castor sugar (caster sugar)
  • 5 Eggs
  • 330 millilitres Milk
  • A few drops Vanilla Essence

Method

  1. Preheat oven at 180°C. Grease an aluminium cake tin and dust with little flour.
  2. Sift together refined flour, cocoa powder, baking soda and baking powder in a bowl. Mix well.
  3. Combine butter and sugar in another bowl.
  4. Break eggs in another bowl and set aside.
  5. Cream butter and sugar till smooth. Add eggs, one-by-one and cream till well blended.
  6. Fold in the flour mixture, little by little and beat well. Add milk, vanilla essence and beat well till well mixed.
  7. Pour the batter in prepared tin, filling 3/4th, tap the tin, place in preheated oven and bake for 40-45 minutes.
  8. Remove from heat and cool. Demould, cut into wedges and serve.
