Ingredients list for Banana and Prune Cake
- 2 Banana pureed
- ½ cup Prunes roughly chopped
- 5 Eggs
- 250 grams Castor sugar (caster sugar)
- 1 teaspoon Vanilla essence
- 250 gms + Butter
- 225 gms + Refined flour (maida)
- 1 teaspoon Baking powder
- ½ teaspoon Soda bicarbonate
Method
- Preheat oven to 180˚C. Grease a cake tin and dust with a little dry flour.
- Break eggs into a bowl, add sugar and vanilla essence and beat with an electric beater till creamy.
- Add butter and continue to beat till smooth. Add banana puree and prunes and beat again.
- Sieve together refined flour, baking powder and soda bicarbonate into the bowl and mix by the cut and fold method.
- Pour the mixture into the greased cake tinand place it in the preheated oven. Bake for 35-40 minutes. Remove from oven and cool down to room temperature.
- Remove the cake from the tin and cut into pieces. Serve warm.
