Ingredients list for Banana Biscuits
- 3 large Ripe bananas
- 1½ cups Refined flour (maida)
- + for greasing Butter 1 cup
- 1 cup Castor sugar (caster sugar)
- 1 teaspoon Baking powder
- ½ cup Desiccated coconut
- ½ cup Rolled oats
- for garnishing Walnuts
- to sprinkle brown sugar/jaggery
Method
- Preheat oven at 220ºC. Grease a baking tray with some butter.
- Cream together butter and castor sugar in a bowl with an electric blender till fluffy and smooth.
- Peel and mash bananas and add to the bowl. Mix well.
- Sift together flour and baking powder in the bowl. Add coconut and oats and mix well.
- Divide the mixture into equal portions and place on the greased tray in the shape of cookies. Place a walnut on each cookie and sprinkle some brown sugar on top.
- Put the tray in the preheated oven and bake for 10-15 minutes.
- Remove from heat, cool to room temperature and serve.
