Ingredients list for Baked Cheesy Potato Shells
- 1/2 cup Processed cheese grated
- 10-12 Baby potatoes boiled
- Butter 1 tablespoon + for drizzling
- 1 medium Onion finely chopped
- 2 tablespoons Refined flour (maida)
- 1/2 cup Milk
- 1/2 medium Yellow bell pepper finely chopped
- 1/2 medium Red bell pepper finely chopped
- 1/2 medium Green capsicum finely chopped
- to taste Salt
- to taste Black pepper powder
Method
- Preheat oven at 180ºC.
- Halve potatoes and scoop out the flesh. Reserve the flesh.
- Place each potato shell in a glass baking dish and drizzle some melted butter on top. Place the dish on a baking tray, put the tray in preheated oven and bake for 7-8 minutes.
- Roughly chop reserved potato flesh.
- Heat 1 tablespoon butter in a non-stick pan. Add onion and sauté till golden. Add refined flour, mix and cook for a minute.
- Add some milk, stir well and cook till the sauce thickens. Add chopped potato flesh, bell peppers and green capsicum and mix well.
- Add remaining milk, salt and pepper powder, mix and cook for a minute. Switch of heat and add some cheese.
- Fill in the baked potato shells with prepared vegetable mixture and top with the remaining cheese.
- Put the dish on a baking tray, put the tray in the preheated oven and bake for 12 minutes.
- Serve hot.
