Ingredients
- 1 medium Long Brinjal
- 1 cup Gram Flour
- 200 grams Processed cheese
- Salt to taste
- 1/4 cup Refined flour
- 1/2 teaspoon Turmeric powder
- 1 teaspoon Ginger-garlic paste
- 1 tablespoon Sweet red chilli sauce
- 4 tablespoons Nylon sev
- Oil for deep-frying
- Thin strips of ginger for garnishing
- Thin strips of spring onion greens for garnishing
Method
- Cut brinjal into roundels.
- Take a cookie cutter of the diameter of the brinjal roundels and cut out a cylinder from the cheese block and further cut the cylinder into roundels.
- Sprinkle salt on brinjal roundels.
- Take gram flour, salt, refined flour, turmeric powder, ginger-garlic paste, red chilli sauce and 2 tablespoons sev in a bowl. Add water as required and mix well into a thick smooth batter.
- Heat sufficient oil in a kadai.
- Add remaining sev in the batter and mix well.
- Place a cheese roundel between two brinjal roundels to make a sandwich. Use up all the brinjal roundels and cheese roundels to make more sandwiches. Dip each sandwich in the batter and deep-fry in hot oil till golden and crisp. Drain on absorbent paper.
- Garnish with ginger strips and spring onion green strips and serve hot.
