Ingredients

  • 1 medium Long Brinjal
  • 1 cup Gram Flour
  • 200 grams Processed cheese
  • Salt to taste
  • 1/4 cup Refined flour
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Ginger-garlic paste
  • 1 tablespoon Sweet red chilli sauce
  • 4 tablespoons Nylon sev
  • Oil for deep-frying
  • Thin strips of ginger for garnishing 
  • Thin strips of spring onion greens for garnishing 

Method

  1. Cut brinjal into roundels.
  2. Take a cookie cutter of the diameter of the brinjal roundels and cut out a cylinder from the cheese block and further cut the cylinder into roundels.
  3. Sprinkle salt on brinjal roundels.
  4. Take gram flour, salt, refined flour, turmeric powder, ginger-garlic paste, red chilli sauce and 2 tablespoons sev in a bowl. Add water as required and mix well into a thick smooth batter.
  5. Heat sufficient oil in a kadai.
  6. Add remaining sev in the batter and mix well.
  7. Place a cheese roundel between two brinjal roundels to make a sandwich. Use up all the brinjal roundels and cheese roundels to make more sandwiches. Dip each sandwich in the batter and deep-fry in hot oil till golden and crisp. Drain on absorbent paper.
  8. Garnish with ginger strips and spring onion green strips and serve hot.
