Ingredients list for Badami Rava Burfi
- 1/2 cup Almonds , roasted and crushed
- 2 tablespoons Almonds , slivered
- 1 cup Semolina (rava)
- 2 1/4 cups Milk
- 1/4 cup + to grease Ghee
- a few Saffron strands
- 1 1/4 cups Sugar
Method
- Heat milk in a pan. Heat ghee in a non-stick pan, add semolina to the ghee and saute, on medium heat, till lightly browned.
- Add saffron to the milk and stir.
- Grease an aluminium burfi tray with a little ghee.
- Add hot milk and sugar to the semolina, mix well and cook stirring continuously. Add roasted and crushed almonds and mix and continue to cook, stirring continuously till the mixture begins to leave the sides of the pan.
- Put the mixture into the greased aluminium tray, spread evenly and level the surface. Set aside to cool and set. Sprinkle slivered almonds on top and press slightly. Chill in the refrigerator or 1-1½ hours.
- Take the tray out of the refrigerator, cut into squares or diamonds, arrange them on a serving platter and serve.
