Bacon Tarts

Bacon strips are baked into tart shells and filled with a zesty hung yogurt mix of spring onions and chillies. A smoky, creamy appetiser with a refreshing crunch. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • Bacon strips as required 
  • ¼ cup hung yogurt
  • 2-3 Spring onion bulbs, finely chopped
  • 1-2 stalks spring onion greens, finely chopped
  • 1-2 green chillies, finely chopped
  • Salt to taste
  • Crushed black peppercorns to taste
  • 1 teaspoon lemon juice
  • Chives, finely chopped + for garnishing

Method

  1. Preheat oven to 180ºC.
  2. Line individual silicon muffin moulds with bacon strips and place them one on top of the other. Line one silicon muffin mould with aluminium foil, fill it up with pebbles and place it on top of the rest of the moulds. Place this stack on a baking tray, place the tray in the preheated oven and bake for 15-20 minutes. Remove from the oven and demould.
  3. Take hung yogurt, spring onion bulbs, spring onion greens, green chillies, salt and crushed peppercorns in a bowl and mix. Add lemon juice and mix well.
  4. Put some yogurt mixture in each bacon tart.
  5. Serve immediately, garnished with chopped chives.
