Ingredients
- 12-16 baby spinach leaves
- 6-8 strawberries, hulled
- 2 tablespoons red wine vinegar
- Salt to taste
- 1 teaspoon crushed black peppercorns
- 2 tablespoons olive oil
- Hazelnuts for garnishing
Method
- Refresh baby spinach leaves by placing them in a bowl with iced water for 10 minutes.
- Put red wine vinegar, salt, crushed peppercorns and olive oil in a bowl and whisk well.
- Halve strawberries and add to the bowl. Refrigerate for 10-15 minutes.
- Drain spinach leaves and add to chilled strawberries. Toss well.
- Serve chilled garnished with hazelnuts.
