How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Aval Varattiyathu Recipe

  • Pressed rice (poha) 1 1/2 cups

  • Jagger 9gur) , grated 3/4 cup

  • Fresh coconut , scraped 1 cup

  • Green cardamom powder 1/4 teaspoon

  • Dried ginger powder 1/4 teaspoon

  • White sesame seeds 1 teaspoon


Step 1

Heat a non-stick pan, add jaggery and 2 tablespoons water and cook till you get a syrup of one thread consistency.

Step 2

Add coconut and cook until the mixture is almost dry.

Step 3

Add pressed rice, green cardamom powder, dried ginger powder and sesame seeds, mix well. Serve
