Ingredients list for Apricot Scones

  • 1/2 cup Dried Apricots
  • 2 1/4 cups Refined Flour
  • 3 teaspoons Baking powder
  • 1/4 teaspoon Soda bicarbonate
  • 1/2 teaspoon Salt
  • to grease Chilled butter cut into cubes 4 tablespoons +
  • Buttermilk 1 cup + for brushing
  • 1 cup Whipped cream
  • Mixed fruit jam for topping


  1. Preheat oven to 180°C.
  2. Mix together flour, baking powder, baking soda and salt in a bowl.
  3. Add butter and rub it with your fingers till the mixture resembles breadcrumbs. Add apricots and mix well.
  4. Add one cup of buttermilk and knead gently into a dough. Rest the dough for ten minutes.
  5. Roll out the dough into a one inch thick sheet. Cut out scones with a two-inch diameter round cookie cutter. Place them on a lined baking tray.
  6. Brush the scones with buttermilk and bake in the preheated oven for fifteen minutes.
  7. Remove from the oven and cool. Arrange the scones on a serving plate, top with whipped cream and jam and serve.
