Ingredients list for Apple and Apricot Cake-Cook Smart
- 350 grams Apples finely chopped
- 200 grams Golden apricots finely chopped
- 300 grams for dusting Refined flour (maida)
- 200 grams for greasing Butter
- 200 grams Brown sugar
- 3 Eggs
- 3 tablespoons Cocoa powder
- 1 tablespoon Instant coffee powder
- 1/2 teaspoon Cinnamon powder
- 2 teaspoons Baking powder
- 100 millilitres Milk
- 200 grams Chocolate chips
Method
- Preheat oven at 170ºC. Grease a square cake tin with butter and dust with refined flour.
- Take butter in a mixing bowl, add brown sugar and beat with an electric beater till light.
- Add eggs and beat again. Scrape the sides of the bowl and mix.
- Sift together cocoa powder, coffee powder, cinnamon powder, refined flour and baking powder directly into the bowl. First mix with a spatula and then beat with the electric beater will well mixed.
- Add milk and continue beating. Add apples, apricots and mix well. . Add chocolate chips and mix well.
- Pour batter into the prepared cake tin, tap lightly and put the tin the preheated oven. Bake for 75-90 minutes.
- Remove from oven, cool and demould. Cut into slices and serve.
