Ingredients
- 1 cup oats
- ¾ cup desiccated coconut
- 1¼ cups refined flour (maida)
- ½ cup butter
- ¾ cup castor sugar (caster sugar)
- 2 tablespoons golden syrup
- ½ teaspoon baking soda
Method
- Preheat the oven to 180˚C. Line a baking tray with a parchment sheet and set aside.
- Take oats in a large bowl and add desiccated coconut. Sieve flour into the bowl and add the castor sugar. Mix it all well.
- Heat butter in a non-stick pan and let it melt. Add golden syrup and mix well.
- Take baking soda in a small bowl, add 1 tbsp water and mix well. Add it to the pan and mix well till the mixture starts foaming. Take it off the heat add to the flour mixture and mix till well combined.
- Divide the mixture into equal portions, shape each into a ball and flatten it slightly. Keep these biscuits on the prepared baking tray.
- Place the tray in the preheated oven and bake for 12 minutes. Take them out of the oven and allow to cool down to room temperature.
- Arrange them on a serving plate and serve or store them in an air-tight container.
