Ingredients list for Anjeer Rabdi
- 1/2 cup Figs soaked and pureed
- 1/2 litres Milk (reduced buffalo)
- 1/2 cup Sugar
- 2 tablespoons Pistachios chopped
- 2 tablespoons Almonds chopped
- for garnish Pistachio slivers
Method
- Heat the reduced milk in a non-stick pan till further reduced and thick. Stir continuously, scraping the sides of the pan.
- Add sugar, mix well and let it dissolve completely.
- Add fig puree, stir well to avoid lumps. Switch off heat, add chopped pistachios and almonds and mix well.
- Transfer the rabdi in a glass bowl and cool to room temperature. Refrigerate to chill.
- Garnish with pistachio slivers and serve chilled.
