History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Almond Katli Modak Recipe

  • Almond flour 1 3/4 cups

  • Sugar 1 cup

  • Milk 2 teaspoons

  • Liquid glucose 1 tablespoon

  • Ghee 3/4 tables for greasing

  • Green cardamom powder 1/4 teaspoon

Method

Step 1

Pour 1 cup water into a deep non-stick pan, add sugar and mix well. Add milk and stir well. Collect the scum that rises on the surface and discard it.

Step 2

Wipe the sides of the pan with a moist muslin cloth to avoid crystallization. Cook till sugar reaches 3 string consistency.

Step 3

Wet your fingers and add liquid glucose to sugar syrup and mix well. Add almond flour and mix well. Add ghee and mix well.

Step 4

Transfer the mixture into a parat and mash well with the help of a wooden masher and spread it evenly. Allow to cool down.

Step 5

Grease your palms with ghee, add green cardamom powder to the mixture and mix well.

Step 6

Stuff small portions of the mixture in modak mould and press it gently. Level the surface with the help of a butter knife. Set aside for 10 minutes. Open the mould and remove the modaks carefully.

Step 7

Arrange the modaks on a serving platter and serve. Or transfer into an airtight container and store in the refrigerator to serve whenever required.
