Ingredients list for Almond Cake
- 1 cup + for dusting Almond flour
- 1/2 cup + for greasing Butter
- 3/4 cup Castor sugar
- 3 Eggs
- 2 tbsps + for dusting Cornflour
- 1 teaspoon Baking powder
- 1 teaspoon Vanilla essence
- 1/2 cup Roasted walnuts , chopped
- for deep-frying Icing sugar
- for garnish Fresh mint sprig
- to serve Fresh mixed berries
Method
- Preheat oven to 180˚C. Grease a cake tin with butter and dust with almond flour.
- Take butter and sugar in a bowl and cream together with an electric beater till fluffy.
- Break the eggs one at a time and add and continue to beat till well combined. Add almond flour, cornflour, baking powder and vanilla essence and mix well.
- Fold in the walnuts into the mixture. Pour the mixture into the greased cake tin, place the tin in the preheated oven and bake for 40-45 minutes.
- Remove the cake tin from the oven and let it cool before demoulding.
- Cut into wedges and place them on a serving plate, dust with icing sugar and garnish with mint sprig. Serve with mixed berries.
