Ingredients for Almond Cake Recipe

  • Almond flour 1 cup + for dusting

  • Butter 1/2 cup + for greasing

  • Castor sugar 3/4 cup

  • Eggs 3

  • Cornflour 2 tbsps + for dusting

  • Baking powder 1 teaspoon

  • Vanilla essence 1 teaspoon

  • Roasted walnuts , chopped 1/2 cup

  • Icing sugar for deep-frying

  • Fresh mint sprig for garnish

  • Fresh mixed berries to serve


Step 1

Preheat oven to 180˚C. Grease a cake tin with butter and dust with almond flour.

Step 2

Take butter and sugar in a bowl and cream together with an electric beater till fluffy.

Step 3

Break the eggs one at a time and add and continue to beat till well combined. Add almond flour, cornflour, baking powder and vanilla essence and mix well.

Step 4

Fold in the walnuts into the mixture. Pour the mixture into the greased cake tin, place the tin in the preheated oven and bake for 40-45 minutes.

Step 5

Remove the cake tin from the oven and let it cool before demoulding.

Step 6

Cut into wedges and place them on a serving plate, dust with icing sugar and garnish with mint sprig. Serve with mixed berries.
