Achari Aloo

Ingredients 

  • 4 medium potatoes boiled, peeled and cut into cubes
  • 1 tablespoon mustard oil
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon fenugreek seeds
  • 1 teaspoon onion seeds
  • 1 teaspoon fennel seeds
  • 1 tablespoon mango pickle masala
  • Salt to taste
  • 1 tablespoon chopped fresh coriander leaves 
  • Fresh coriander sprig to garnish

Method

  1. Heat oil in a deep non-stick pan, add mustard seeds and let them splutter.
  2. Add fenugreek seeds, onion seeds, fennel seeds and mango pickle masala and mix well.
  3. Add potatoes and toss. Add salt and mix well. Add coriander leaves and toss. Cover and cook for 2-3 minutes.
  4. Transfer into a serving dish, garnish with coriander sprig and serve hot.
