Ingredients 

  • 8-10 snow peas, sliced diagonally 
  • 5-6 straw mushrooms, halved 
  • ¼ small cabbage, cut into half-inch cubes 
  • 1 tablespoon oil 
  • 2 lemon grass stalks, sliced
  • 1-inch piece bamboo shoot (optional)  
  • 4 kaffir lime leaves  
  • 1 tablespoon Red Curry Paste                         
  • Salt to taste
  • 4 fresh red chillies, sliced diagonally 
  • 2 tablespoons lemon juice
  • 2 sprigs fresh coriander leaves 

Method 

  1. Heat oil in a pan. Add snow peas, straw mushrooms, lemon grass and bamboo shoot and toss to mix.  Bruise kaffir lime leaves; add to the pan and mix. 
  2. Stir in the red curry paste.  Add four cups of water and bring the mixture to a boil; add cabbage and salt.  Stir again and add fresh red chillies.
  3. Remove from heat and add lemon juice.Tear coriander leaves roughly and add to the soup.Stir and serve piping hot.
