Ingredients list for Tender Chicken Stew With Spinach
- 400 grams Boneless Chicken cut into 1 inch cubes
- 8-10 Spinach Leaves shredded
- 1 tablespoon Olive oil
- 8-10 cloves Garlic chopped
- 8-10 Mushrooms quartered
- to taste Salt
- 2 teaspoons Dry oregano
- 3 cups Chicken stock
- 1 large Tomato blanched, peeled and chopped
- 2 tablespoons Refined flour (maida)
Method
- Heat oil in a non-stick pan, add garlic and sauté for two minutes.
- Add mushrooms and salt and sauté for four to five minutes.
- Add chicken, oregano and sauté on high heat for five minutes.
- Add two cups of chicken stock and let it come to a boil. Add tomato and cook for two minutes
- Mix refined flour in the remaining stock and add to the chicken. Mix well, cover and cook for four to five minutes.
- Add spinach leaves and mix well. Serve hot with garlic bread.
