Ingredients
- 200 grams cottage cheese, cut into 1/2 inch cubes
- 2 oranges
- 1 large cucumber, cut into 1/2 inch pieces
- 1 medium green capsicum, seeded and cut into 1/2 inch pieces
- 1/4 cup pomegranate pearls
- A few iceberg lettuce leaves
- A few lollorosso lettuce leaves
- 1 tablespoon honey
- 1 1/2 tablespoons lemon juice
- Salt to taste
- 3-4 black peppercorns, crushed
- 2 tablespoons olive oil
- 1/2 teaspoon red chilli flakes
- 1/2 teaspoon mixed herbs
Method
- Combine honey, lemon juice, salt, crushed black peppercorns, olive oil, red chilli flakes and mixed herbs in a bowl and whisk well.
- Take cucumber, green capsicum, paneer, orange, pomegranate pearls, iceberg lettuce and lollorosso (red) lettuce in a bowl. Add the dressing and toss. Do not mix too much. Serve immediately.
