Sticky Date Pudding

Ingredients list for Sticky Date Pudding

  • 3/4 cup Dates chopped
  • 90 grams + tablespoon Butter
  • 1 1/2 cups for dusting Refined flour
  • 1/2 teaspoon Baking soda
  • 1 cup + 2 tablespoons Brown sugar
  • 2 Eggs
  • 1 teaspoon Vanilla essence
  • 3/4 cup Fresh cream
  • to serve Ice cream scoops
  • to serve Fresh mint sprigs

Method

  1. Preheat oven to 180° C. Grease a baking dish and dust it with some flour.
  2. Take dates in a bowl, add baking soda and sufficient water and let them soak.
  3. Take butter in a mixing bowl, add 1 cup brown sugar and beat together with an electric beater until creamy.
  4. Break in the eggs and add vanilla essence and continue to beat till well incorporated.
  5. Add refined flour and fold in with a spatula till there are lumps.
  6. Add the soaked dates and fold in again.
  7. Pour the prepared batter into the lined baking dish, place it in the preheated oven and bake for 10-15 minutes.
  8. Heat the remaining brown sugar in a non-stick pan and heat till it caramelises. Add fresh cream and mix well. Add butter and mix till it melts.
  9. Bring the baking dish out of the oven and pour this sauce over the pudding. Place the dish back in the hot oven and bake again for 45-50 minutes.
  10. Cut into squares, place each square in a serving plate, place a scoop of vanilla ice-cream over it, garnish with a mint sprig and serve
