Sooji French Fries These French fries are made of semolina mixture instead of potato but are just as delicious and crisp This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 23 Mar 2021 in Recipes Course New Update Main Ingredients Semolina (suji / rawa), Salt Cuisine Fusion Course Snacks and Starters Prep Time 11-15 minutes Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Sooji French Fries 1 cup Semolina (suji / rawa) to taste Salt for drizzl to deep fry Oil to sprinkle Red chilli flakes to sprinkle Dried oregano Method Boil 1½ cups water in a non-stick pan, add semolina and salt and mix well. Cover and cook for 2 minutes. Uncover and cook till the mixture leaves the sides of the pan and forms a lump. Take it off the heat and let it cool down to room temperature. Place it on a piece of cling film, drizzle a little oil on it and place another piece of cling film on top and flatten slightly and roll into thick sheet. Grease a knife, and trim the edges of the semolina sheet to straighten them. Cut the remaining into fingers. Heat sufficient oil in a wok, slide in the semolina fingers and deep fry till golden brown and crisp. Drain on absorbent paper. Transfer into a bowl, sprinkle red chilli flakes, dried oregano and a pinch of salt and toss well.
