Ingredients list for Sandesh-SK Khazana

  • (2 litres) cups Cow's milk
  • 1/2 cup Lemon juice
  • 1 cup Castor sugar
  • 1/2 teaspoon Green cardamom powder
  • a few Pistachios blanched and finely chopped

Method

  1. Bring the milk to a boil in a deep, thick-bottomed non-stick pan. Add lemon juice and stir till the milk curdles and becomes chenna.
  2. Place a strainer lined with muslin cloth over a bowl and pour the chenna into it and drain excess liquid.
  3. Put some ice cubes in a large bowl, add sufficient water and dip the muslin cloth with the chenna in it to cool it down completely.
  4. Further squeeze the muslin cloth potli till all the water is drained out.
  5. Put the chenna in a parat, add castor sugar and cardamom powder and knead with the heel of your hand.
  6. Transfer the mixture into a non-stick pan and cook on medium heat for 6-8 minutes. Remove from heat and transfer the mixture into a bowl and let it cool.
  7. Divide the mixture into equal portions, shape into balls and flatten slightly.
  8. Top with some pistachios and serve.
