The Bengalis are great food lovers and take pride in their cuisine.  In fact so obsessed are they about food, that the man of the house goes to the market daily to buy a fresh supply vegetables and fish which is a must in their daily menu.  The medium of cooking is mustard oil which adds its own pungency.  Another very important item of Bengali cuisine is the variety of sweets or mishti as they call them.  Most of them are milk based and are prepared from chhena.
A meal, for the Bengali, is a ritual in itself.  Bengalis spend not only the great deal of time thinking about the food but also on its preparation and eating.

Ingredients for Rosh Bora - SK Khazana Recipe

  • Urad dal 1 cup

  • Sugar 1 cup

  • Fennel seeds 2 teaspoons

  • Black peppercorns 8-10

  • Green cardamoms 8

  • A pinch of salt

  • Oil for deep frying

  • Slivered almonds for sprinkling

  • Slivered pistachios for sprinkling


Step 1

Take urad dal in a bowl, wash it well and soak in sufficient water for 3-4 hours.

Step 2

Put fennel seeds in a mortar, add black peppercorns and3 green cardamoms and pound them with a pestle into a coarse powder.

Step 3

Transfer the soaked and drained urad dal into a blender jar, add a little salt and a little water and blend to a thick and fine paste.

Step 4

Transfer into a bowl and beat till the colour changes and the mixture becomes light.

Step 5

Heat sufficient oil in a kadai. Meanwhile, to make sugar syrup, heat a non-stick pan, add sugar and 1 cup water and let it cook. Add remaining green cardamoms and let the sugar melt completely and form a syrup. Switch off the heat.

Step 6

Add some of the coarsely ground spices to the urad dal paste and mix well. Drop in spoonful of the batter into the hot oil and deep-fry till golden and crisp. Drain on absorbent paper.

Step 7

Add the fried bodasto the sugar syrup,mix gently and let them soak for 15-20 minutes.

Step 8

Drain the bodas and place them on a serving plate. Sprinkle slivered almonds and slivered pistachios over them and serve.
