Roasted Tomato Salsa

Ingredients 

  • 4 medium tomatoes
  • 2 jalapenos 
  • 4-5 garlic cloves
  • 1 medium onion
  • 1 tablespoon olive oil for drizzling
  • Salt to taste

Method

  1. Heat a non-stick tawa, place whole tomatoes, jalapenos, garlic and onion and roast on all sides for 25-30 minutes or till completely charred.
  2. Drizzle olive oil and roast further for 2-3 minutes.
  3. Roughly chop the charred ingredients and put them in a mortar, add olive oil and grind with a pestle till smooth.
  4. Serve as required.
