Ingredients list for Rice With Sesame Fried Vegetables

  • 2 cups Basmati Rice soaked
  • 1 tablespoon White Sesame Seeds
  • 2 sprigs Spring onion bulbs
  • 7-8 small Red radish
  • 1 medium Carrot cut into thin strips
  • 1 small Cucumber peeled
  • 2 tablespoons Oil
  • 1 1/4 tablespoons Garlic crushed
  • 1 1/4 tablespoons Soy sauce
  • to taste Salt
  • 1 1/4 tablespoons Tahini paste
  • 2 tablespoons Lemon juice
  • to sprinkl Toasted white sesame seeds
  • 2 stalks Spring onion greens

Method

  1. Boil rice in plenty of salt water until soft. Keep stirring once a while while cooking.Heat oil in a non stick pan. Slice spring onion bulbs and add. Roughly chop radish and add. Sauté for 2-3 minutes.
  2. Add garlic and carrot. Cut cucumber into strips. Toss the vegetables in the pan and sauté for 2-3 minutes.Add sesame seeds. Chop spring onion greens. Add soya sauce and cucumber. Toss to mix and add salt. Mix well.
  3. Add spring onion greens and sauté for 1 minute. Switch off heat and transfer some sautéed vegetables in a plate. Reserve this for garnishing.
  4. When rice is done, drain and add to the pan with remaining sautéed vegetables. Add tahini paste and lemon juice. Mix well. Transfer rice onto a serving dish. Add reserved sautéed vegetables on top and sprinkle toasted sesame seeds on top.
  5. Serve hot.
