How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Rice With Sesame Fried Vegetables Recipe

  • Basmati Rice soaked 2 cups

  • White Sesame Seeds 1 tablespoon

  • Spring onion bulbs 2 sprigs

  • Red radish 7-8 small

  • Carrot cut into thin strips 1 medium

  • Cucumber peeled 1 small

  • Oil 2 tablespoons

  • Garlic crushed 1 1/4 tablespoons

  • Soy sauce 1 1/4 tablespoons

  • Salt to taste

  • Tahini paste 1 1/4 tablespoons

  • Lemon juice 2 tablespoons

  • Toasted white sesame seeds to sprinkl

  • Spring onion greens 2 stalks

Method

Step 1

Boil rice in plenty of salt water until soft. Keep stirring once a while while cooking.Heat oil in a non stick pan. Slice spring onion bulbs and add. Roughly chop radish and add. Sauté for 2-3 minutes.

Step 2

Add garlic and carrot. Cut cucumber into strips. Toss the vegetables in the pan and sauté for 2-3 minutes.Add sesame seeds. Chop spring onion greens. Add soya sauce and cucumber. Toss to mix and add salt. Mix well.

Step 3

Add spring onion greens and sauté for 1 minute. Switch off heat and transfer some sautéed vegetables in a plate. Reserve this for garnishing.

Step 4

When rice is done, drain and add to the pan with remaining sautéed vegetables. Add tahini paste and lemon juice. Mix well. Transfer rice onto a serving dish. Add reserved sautéed vegetables on top and sprinkle toasted sesame seeds on top.

Step 5

Serve hot.
