How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Rice Kheer With Muesli Recipe

  • Rice 3 cups

  • Milk 3 tablespoons

  • Whole milk 1 litres

  • Saffron (kesar) 6-8 a few strands

  • Sugar 6 tablespoons

  • Green cardamom powder 1/2 teaspoon

  • For garnishing

  • Strawberries,cut into cubes 5-6

  • Ripe banana,cut into small cubes 1

Method

Step 1

Soak saffron strands in 1 tbsp of warm milk. Boil milk in a deep non stick pan, add rice and reduce heat.

Step 2

Cook, stirring continuously, till milk reduces to one-third of its original quantity.

Step 3

Add sugar and mix, partially crushing the rice.Add muesli, cardamom powder and saffron milk and mix well.

Step 4

Serve hot or cold garnished with strawberries and banana.
