How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Cook time : 16-20 minutes

Ingredients for Rice In Matka Recipe

  • Basmati rice soaked 1 1/2 cups

  • Fresh button mushrooms sliced 7-8

  • Fresh red chilli sliced 1

  • Oil 1/2 tablespoon

  • Turmeric powder 1/2 teaspoon

  • Vegetable stock infused for 15 mins with 4 inch lemon grass 3 cups

  • Salt to taste

Method

Step 1

Preheat oven at 180 °C.

Step 2

Take a matka, place it over heat. Add oil, sauté red chilli slices. Add mushrooms and turmeric powder. Drain rice and add it to the matka and sauté.

Step 3

Add vegetable stock and salt. Stir. Take the matka off the heat. Seal lid with atta. Place in hot oven and cook for 15 minutes. Remove seal when ready to serve.
