Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Rajgira Kheer Recipe

  • Puffed ramdana (rajgira) 1 cup

  • Milk 5 cups

  • Green cardamoms 2-3

  • Sugar 1/2 cup

  • Pure ghee 3 tablespoons

  • Almonds blanched and slivered 10-12

  • Nutmeg powde 1/4 teaspoon

Method

Step 1

Bring milk to a boil. Reduce heat and allow to simmer for half an hour stirring continuously. Grind green cardamoms in a mixer with sugar to a fine powder.

Step 2

Take a pan, heat ghee, add rajgira and fry on low heat till it is roasted slightly. Add reduced milk to it and bring it to boil. Reduce heat and continue cooking for five minutes.

Step 3

Add mixture of sugar and cardamom and simmer for another five minutes. Add almond slivers and nutmeg powder and stir. Remove from heat and serve hot.
