Prawn Stew

Ingredients list for Prawn Stew

  • 1 cup Prawns (medium) shelled and deveined
  • 2 tablespoons Butter
  • 1 cup Onions finely chopped
  • 1 cup Leek finely chopped
  • 8-10 Potatoes halved
  • 1 cup White wine
  • to taste Salt
  • 2 cups Fish stock
  • ½ cup Fennel bulb chopped
  • 1 teaspoon Paprika powder
  • ½ cup Fresh cream
  • 1 tablespoon Fresh parsley chopped

Method

  1. Heat butter in a non-stick pan. Add onion and sauté for 1-2 minutes.
  2. Add leek and sauté for 2 minutes. Add potatoes and mix well. Add wine and mix.
  3. Add salt and fish stock, mix, cover and cook for 5-6 minutes.
  4. Add prawns and mix well. Add fennel, mix well, cover and cook on low heat for 2-3 minutes.
  5. Add paprika powder and cream, mix well and cook for 2 minutes.
  6. Add parsley and mix well.
  7. Serve hot.
