Ingredients list for Potato Bravas

  • 4 medium Potatoes boiled, peeled and chopped
  • to deep fry Onion
  • 2 tablespoons Extra virgin olive oil
  • 1 large Onion chopped
  • 1 tablespoon Garlic chopped
  • 3 medium Tomatoes grated
  • to taste Salt
  • to taste Paprika
  • a pinch Wine salt

Method

  1. Cut potatoes into big pieces. Heat sufficient oil in a kadai.
  2. Heat 2 tbsps extra virgin olive oil in a non stick pan, add onions and garlic and saute for 1-2 minutes. Add tomatoes and continue to saute for 1-2 minutes.
  3. Add potatoes to the oil in the kadai and deep fry. Add salt and paprika to onion-tomato mixture and saute. Add a little water and cook till tomatoes soften. Cool the onion-tomato mixture and grind till smooth.
  4. Deep fry potatoes till golden and drain on absorbent paper. Sprinkle a little wine salt on them. Pour the sauce over and serve hot.
