How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Ponni Recipe

  • Rice 85 grams

  • Almonds 30 grams

  • Milk 1.2 litre

  • Green cardamoms 4

  • Sultanas 50 grams

  • Salt a pinch

  • Rose water 1 teaspoon

  • Orange 12 segment


Step 1

Wash and soak the rice in water for 30 minutes. Drain. Chop the blanched almonds. Pour the milk into a pan and add the rice. . Bring it to boil, stirring constantly. Cook until the rice is soft and of creamy consistency. Add the sugar and stir until the sugar dissolves.

Step 2

Add the cardamoms, chopped almonds, sultanas, pinch of salt and rose water. Continue cooking for few more minutes and serve hot immediately. Can be served cold also. Cool ponni completely. Peel the orange segments and remove the seeds. Place them in individual bowls and add the cold ponni on top.
