The high plateau yields wonderful vegetables and the north is cattle country…..and to bind all these in one single string are chillies…in every shape, colour and size, from the subtle to the strong, producing a signature to Mexican cuisine.

Ingredients for Pizza Nachos Recipe

  • Nachos 20-24

  • Small onions finely chopped 2

  • Small tomatoes finely chopped 2

  • Green chillies finely chopped 2

  • Salt to taste

  • Lemon juice extracted 1

  • Fresh basil leaves torn into small pieces 2-3

  • Pizza sauce as required

  • Processed cheese as required

  • Black olive slices 12-16

Method

Step 1

To make the topping, take onions in a bowl, add tomatoes, green chillies, salt, lemon juice and basil leaves and mix well.

Step 2

Spread a little pizza sauce on each piece of nachos, top with the onion-tomato mixture and place them on a serving plate.

Step 3

Grate processed cheese generously over the nachos, top with olives and serve immediately.
