Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Pineapple Aabshola Recipe

  • Pineapple 1 medium

  • Fresh mint leaves 4-6

  • Powdered sugar 1/4 cup

  • Lychees 2

  • Black salt (kala namak) to taste

  • Black peppercorns crushed 6-8

  • Lemon grass 4 stalks

Method

Step 1

Peel, and slice pineapple thinly

Step 2

Wash mint leaves. Dust fresh pineapple slices with powdered sugar.

Step 3

Arrange them on a tray and heat, turning over from time to time, till they caramelize .

Step 4

This will take about five minutes. Add some water and continue cooking for another three minutes.

Step 5

Place these slices in a blender with lychees and blend.

Step 6

Add the caramel liquid and blend again.

Step 7

Add black salt and mint leaves and blend. Add ice, crushed peppercorns and blend once more.

Step 8

Pour the liquid into a stemmed glass.

Step 9

Put in a lemongrass stalk as stirrer and serve chilled.
