Ingredients for Pesto Chicken Bake Recipe

  • Pesto sauce ½ cup

  • Boneless chicken breasts sliced 250 grams

  • Tomatoes cut into roundels 2 medium

  • Salt to taste

  • Crushed black peppercorns to taste

  • Mozzarella cheese cut into roundels 200 grams

  • Mixed herbs to sprinkle

Method

Step 1

Preheat oven to 180° C.

Step 2

Line a glass baking dish with tomato roundels and sprinkle some salt and crushed peppercorns over them.

Step 3

Place chicken slices covering the tomato layer and spread pesto on top. Sprinkle some salt and crushed peppercorns over the pesto.

Step 4

Place the baking dish in the preheated oven and bake for 8-10 minutes. Remove from oven.

Step 5

Place mozzarella cheese roundels on top covering the pesto layer and sprinkle some mixed dried herbs, crushed peppercorns and salt.

Step 6

Place the dish back into the preheated oven and bake for 5 minutes.

Step 7

Serve hot.
