Ingredients list for Pesto Chicken Bake
- ½ cup Pesto sauce
- 250 grams Boneless chicken breasts sliced
- 2 medium Tomatoes cut into roundels
- to taste Salt
- to taste Crushed black peppercorns
- 200 grams Mozzarella cheese cut into roundels
- to sprinkle Mixed herbs
Method
- Preheat oven to 180° C.
- Line a glass baking dish with tomato roundels and sprinkle some salt and crushed peppercorns over them.
- Place chicken slices covering the tomato layer and spread pesto on top. Sprinkle some salt and crushed peppercorns over the pesto.
- Place the baking dish in the preheated oven and bake for 8-10 minutes. Remove from oven.
- Place mozzarella cheese roundels on top covering the pesto layer and sprinkle some mixed dried herbs, crushed peppercorns and salt.
- Place the dish back into the preheated oven and bake for 5 minutes.
- Serve hot.
