Ingredients for Penne With Three Capsicums And Mozzarella Recipe

  • Penne pasta 250 grams

  • Green capsicum

  • Red capsicum 1 medium

  • Green capsicum 2 medium

  • Yellow capsicum 1 medium

  • Mozzarella cheese grated 1/2 cup

  • Olive oil 2 tablespoons

  • Onion sliced 1 medium

  • Garlic chopped 3 cloves

  • Dried oregano 1/2 teaspoon

  • Dried basil 1/2 teaspoon

  • Black peppercorns crushed 5-6

  • Parmesan cheese grated 2 tablespoons


Step 1

Cook penne in seven to eight cups of boiling salted water to which a teaspoon of oil has been added till al dente (cooked, but still firm to the bite).

Step 2

Drain, refresh in cold water and set aside to cool. Roast the whole capsicums over an open flame. Refresh in cold water, peel, halve, remove seeds and cut into thin strips.

Heat oil in a pan; add the onion, garlic, dried oregano, dried basil, crushed peppercorns and salt and sauté over high heat for two to three minutes, stirring occasionally. Add the cooked penne, the capsicums and mozzarella cheese, toss lightly, cover and

Serve hot, sprinkled with grated Parmesan cheese.
