Ingredients list for Pasta With Buttermilk And Spinach

  • 1 cup Penne cooked till al dante
  • 1 cup Buttermilk
  • 4 tablespoons Spinach puree
  • 4 tablespoons Olive oil
  • 1 tablespoon Garlic finely chopped
  • 1 1/2 tablespoons Refined flour (maida)
  • to taste Salt
  • to taste Black pepper powder
  • 1 medium Red capsicum finely chopped
  • 2 tablespoons Parmesan cheese grated

Method

  1. Heat 2 tbsps olive oil in a non-stick pan, add garlic and sauté for 1 minute.
  2. Add refined flour and sauté, stirring continuously, for 2-3 minutes. Add buttermilk gradually and stir continuously to avoid lumps. Add salt and black pepper powder, mix well and cook for 3-4 minutes.
  3. Heat remaining oil in another non-stick pan, add bell pepper and toss. Add salt and black pepper powder, mix well and cook till soft.Add spinach puree to the buttermilk sauce and mix well and adjust seasoning.
  4. Add penne and mix well. Add cheese, mix well and cook for 3-4 minutes.Transfer into a serving bowl, top with sautéed bell peppers and serve hot.
