Hindi: palak
Treasure house of vitamins and minerals, spinach must be included in the week's menu. The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Ingredients for Palak Raita Recipe

  • Spinach chopped 2 bunches

  • Skimmed milk yogurt 2 cups

  • Cumin seeds 2 teaspoons

  • Black salt (kala namak) to taste

  • Red chilli powder 1 tablespoon

  • Oil 1/2 teaspoon

  • Garlic finely chopped 3/4 cloves

  • Green chillies finely chopped 2

  • Spring onions with greens chopped 2 medium

  • Salt to taste

Method

Step 1

Dry roast cumin seeds on a hot tawa and grind to a fine powder. Whisk the skimmed milk yogurt and add black salt, roasted cumin powder and red chilli powder.

Step 2

Mix well and chill in the refrigerator. Heat oil in a non-stick pan, add garlic and green chillies and stir-fry briefly. Add spinach and spring onion along with its greens and sauté over high heat for three to four minutes, stirring continuously.

Step 3

Season with salt and mix well. Continue to cook on high heat till the spinach is almost dry. Take it off the heat and cool. Mix with the seasoned yogurt just before serving.
