The cuisine of The United States is a rich amalgamation of peoples, religions and cultures thanks to the immigrants from different parts of the world.  They brought with them their local ingredients as well as cooking styles with them.  Yet amidst all these varieties Chinese and Italian cuisines dominate.  
During the 18th and 19th centuries, the Americans developed a number of new foods.  What characterised the American cuisine is the adaptation of a fusion of multiple ethnic cooking styles. During this period food production and presentation became more industrialised.

Ingredients for Multi Grain Bread Recipe

  • Rolled oats 3/4 cup

  • Wheat bran 6 tablespoons

  • Soya flour 1 cup

  • Whole wheat flour (atta) 3/4 cup +2 tablespoons

  • Refined flour (maida) 3 cups

  • Fresh yeast 17 grams

  • Milk 2 cups

  • Salt 2 teaspoons

  • Oil 1/4 cup

  • Brown sugar 1/4 cup

  • Honey 2 tablespoons

  • Eggs, lightly beaten 2


Step 1

Mix yeast with one-fourth cup of lukewarm water and stir. Set aside for about fifteen minutes. Grease a baking tray. Place the oats in a large bowl. Bring milk to a boil and pour over the oats. Add salt, oil, brown sugar and honey.

Step 2

Cool the mixture. Stir in the yeast mixture, eggs, wheat bran, soy flour and whole wheat flour. Gradually stir in enough refined flour to get a rough dough. Transfer the dough to a floured surface and knead, adding more flour if necessary, until smooth and elastic.

Step 3

Transfer into a clean bowl, cover with a damp cloth and set aside in a warm place until it doubles in volume. This may take about two and a half hours. Knock back the risen dough and knead briefly.

Step 4

Divide the dough into two equal portions. Roll each portion into a thick cylinder and further twist to any shape and place on the baking tray. Cover and set aside to rise for one hour or until doubled in volume. Preheat oven to 190°C/375°F/Gas Mark 5.

Step 5

Bake the breads until the bottoms of breads sound hollow when tapped lightly. This may take around forty five to fifty minutes. Turn them over to a wire rack to cool for slicing and serving.
