Molten Marble Cake

These cupcakes have marble effect and when cut molten peanut butter just oozes out – delicious. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Molten Marble Cake

  • ½ cup Refined flour (maida)
  • 1 cup Dark chocolate chopped
  • 8 tablespoons Peanut butter
  • ½ cup Butter
  • 4 Eggs
  • 6 tablespoons Powdered sugar
  • 1 tablespo + for dusting Cocoa powder
  • ½ teaspoon Baking powder

Method

  1. Preheat oven to 180° C.Line a baking tray with individual silicon cupcake moulds.
  2. Fill a piping bag with peanut butter.
  3. Combine chocolate and butter in a microwave proof bowl and melt in microwave for 1 minute. Remove from microwave and mix well.
  4. Break eggs into another bowl. Add powdered sugar and whisk with an electric beater. Add melted chocolate-butter mixture and whisk.
  5. Sieve together flour, cocoa powder and baking powder into the egg mixture and fold in well to make a smooth batter.
  6. Half fill the cupcake moulds with this batter and pipe out some peanut butter in the center. Pour remaining batter on top filling ¾ of the moulds.
  7. Place the tray in the preheated oven and bake for 8-10 minutes.
  8. Place a fork on one side of a serving platter, dust some cocoa powder on top and remove the fork to create its impression.
  9. Place the moulds inverted on the prepared platter, demould and serve hot.
