History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Mirchi Murgh Recipe

  • Chicken leg 4

  • Onion 4 teaspoons

  • Tomato puree 4 tablespoons

  • Sugar 1/4 teaspoon

  • Salt to taste

  • Fresh coriander sprigs chopped a few

  • Marinade

  • Onion roughly chopped 1 medium

  • Garlic roughly chopped 4 cloves

  • Ginger roughly chopped 2 inch piece

  • Green cardamoms 4

  • Green chillies roughly chopped 5-6

  • Salt to taste

  • Lemon juice 2 teaspoons

  • For paste

  • Coriander seeds 2 tablespoons

  • Cumin seeds 1 teaspoon

  • Dried red chillies 4-5

  • Cinnamon 1 inch stick

  • Cloves 4

Method

Step 1

Cut each chicken leg into two at the knee joint. For the marinade grind onion, garlic, ginger and green chillies to a smooth paste.

Step 2

Stir in salt and lemon juice. Apply this mixture on the chicken pieces. Cover and leave to marinate for four to six hours in the refrigerator. Remove from refrigerator at least thirty minutes before cooking. For the paste grind coriander seeds, cumin seeds, red chillies, cinnamon, cloves and green cardamoms and a little water to a smooth paste.

Step 3

Place the marinated chicken in a microwave casserole. Cook, covered, on Microwave HIGH (100%) for eight minutes, stirring once. Mix in the paste and cook, covered, on Microwave HIGH (100%) for three minutes, stirring once. Stir in the oil, tomato puree, sugar and salt to taste. Cover and cook on Microwave MEDIUM (70%) for ten minutes.

Step 4

Garnish with coriander leaves and serve hot.
