Minestrone Chunky vegetable soup This recipe is from FoodFood TV channel By Sanjeev Kapoor 29 May 2014 in Recipes Course New Update Main Ingredients Macaroni, Tomato puree Cuisine Italian Course Soups Prep Time 16-20 minutes Cook time 16-20 minutes Serve 4 Taste Tangy Level of Cooking Easy Others Veg Ingredients list for Minestrone 2 tablespoon Macaroni 4 1/2 cups Tomato puree 1/2 medium Carrot,grated 1/2 medium Potato,grated 1/4 small Cabbage,finely chopped 3-4 French beans,finely chopped 1/2 medium Green zucchini,chopped 1/2 medium Yellow zucchini 2-3 cloves Garlic 2 teaspoons Tomato concasse 1/2 cup Tomato puree to taste Salt 1/2 teaspoon White pepper powder 1/2 teaspoon Dried oregano,crushed 3 tablespoons Pine nuts(chilgoza) 50 grams Parmesan cheese Method Heat stock in a deep non stick pan. Add carrot, potato, cabbage, macaroni, French beans, green zucchini and yellow zucchini. Chop garlic and add. Add tomato concasse and tomato puree and mix. Mix salt and white pepper powder in a little stock and add and mix well. Cook till the pasta is done. Add oregano and mix well. Put some pine nuts in the serving bowl. Slice parmesan cheese thinly.
