Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Matka Kulfi - SK Khazana Recipe

  • Milk 1 litres

  • Castor sugar 1/4 cup

  • Khoya / mawa 3/4 cup

  • Green cardamom powder 1/2 teaspoon

  • Pistachios blanched and finely chopped 1 tablespoon


Step 1

Pour milk into a deep non-stick pan and bring it to a boil. Further simmer till reduced to ⅓ its volume.

Step 2

Remove from heat, add castor sugar, khoya and cardamom powder and mix till khoya melts. Add pistachios and mix well.

Step 3

Fill the mixture into earthen pots (kulhads/matkas) and set aside to cool down to room temperature. Then keep them in the freezer to set.

Step 4

Serve immediately.
