Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Masaledar Gobhi Recipe

  • Cauiliflower 400 grams

  • Fresh Coriander 2 medium

  • Garlic 10 cloves

  • Ginger 1 1/2 inch piece

  • Green chillies 2

  • Fresh coriander leaves 1/2 medium bunch

  • Whole dry red chilli 4

  • Cloves 6

  • Green cardamoms 3

  • Turmeric powder 1 teaspoon

  • Cumin powder 1/2 teaspoon

  • Yogurt 3/4 cup

  • Salt to taste

  • Oil 1 tablespoon

  • Mustard seeds 1 teaspoon


Step 1

Separate cauliflower into smaller florets. Wash and drain them. Peel, wash and chop onions, garlic and ginger. Remove stems, wash and chop green chillies. Clean, wash and chop coriander leaves.

Step 2

Remove stems of red chillies. Grind onions, garlic, ginger, red chillies, cloves, green cardamoms, turmeric powder, cumin powder to a fine paste. Mix the ground masala with yogurt.

Step 3

Add salt and marinate the cauliflower florets in this for half an hour. Heat oil in a kadai, add mustard seeds and when they crackle add green chillies and sauté for half a minute.

Step 4

Add marinated cauliflower and cook for five minutes on high heat, stirring constantly. Add one and a half cups of water and bring it to a boil.

Step 5

Lower heat and cook covered till the cauliflower is cooked. Serve hot garnished with chopped coriander leaves.
