Ingredients for Mango Cake-SK Khazana Recipe

  • Mango puree 3/4 cup

  • Medium mango peeled and chopped 1

  • Refined flour (maida) 1 1/2 cups for dusting

  • Butter 1 cup + for greasing

  • Castor sugar 1/2 cup

  • Eggs 2

  • Vanilla essence 1 teaspoon

  • Pistachios blanched and peeled 1/4 cup + For topping


Step 1

Preheat oven to 180ºC. Grease a loaf tin with some butter and dust with some flour.

Step 2

Take butter in a mixing bowl, add castor sugar and beat with an electric beater till light and fluffy. Add eggs and beat till smooth.

Step 3

Add vanilla essence and mango puree and beat well.

Step 4

Sift flour into the bowl. Add chopped mango and pistachios and fold in well.

Step 5

Pour batter into the lined tin and tap lightly. Top with some pistachios. Put the tin in the preheated oven and bake for 25-30 minutes.

Step 6

Remove from heat, cool down to room temperature, demould and slice.
