Ingredients list for Lentil And Coriander Soup

  • 3/4 cup Split Red Lentil
  • 1 tablespoon Fresh Coriander Leaves
  • 1 medium Onion chopped
  • 1 teaspoon Ginger chopped
  • 5 cloves Garlic chopped
  • 2 Spring onion greens chopped
  • to taste Salt
  • 1 teaspoon Black peppercorns crushed
  • 1/2 cup Fresh coriander leaves chopped
  • 1/2 cup Coconut milk

Method

  1. Pick, wash and soak Masoor dal. Chop onions, ginger and garlic.
  2. Heat olive oil in a pan. Add onion and sauté till transluscent.
  3. Add ginger,garlic, and spring onion leaves and sauté well. Add dal and mix well.
  4. Add water/stock (300ml), salt, crushed pepper corns bring to a boil and let it cook covered. Or pressure cook.
  5. Add coconut milk and half the chopped coriander leaves and simmer.
  6. Remove from the heat and cool. Blend the dal in a mixer. Reheat the pureed dal.
  7. Add water/stock to correct the consistency. Serve hot garnished with the remaining chopped coriander leaves.
