Ingredients for Lemon Baked Chicken Recipe

  • Chicken on bone cut into pieces 750 grams

  • Lemons 2

  • Extra virgin olive oil 2 teaspoons + 2 tablespoons + for greasing

  • Medium potatoes peeled 3

  • Salt to taste

  • Medium red capsicum 1

  • Medium green capsicum 1

  • Juice of 1 lemon

  • Garlic cloves 9-10

  • Green chilli sauce 1 tablespoon

  • Ginger-garlic paste 1 teaspoon

  • Black pepper powder 1 1/2 teaspoons

  • Salad leaves to serve


Step 1

Preheat oven to 180ºC. Grease a baking dish with some olive oil.

Step 2

Slice potatoes and place in the greased dish. Sprinkle salt and drizzle 2 teaspoons olive oil on top. Put dish in the oven and bake for 15 minutes.

Step 3

Roughly chop red and green capsicums and place these in a bowl.

Step 4

Cut lemons into thin wedges.

Step 5

Add lemon juice, garlic cloves, chicken, green chilli sauce, ginger-garlic paste, salt, pepper powder and lemon wedges to the bowl. Mix well. Add 2 tablespoons olive oil, mix well and set aside to marinate for 2 hours.

Step 6

Take the baking dish with potatoes out of the oven and put the marinated chicken along with lemon and vegetables on top. Place the dish back in the oven and bake at 180ºC for 1 hour 15 minutes.

Step 7

Serve hot on a bed of salad leaves.
